Oatmeal Banana Bread

I LOVE banana bread but not all the refined flour and sugar that it is typically made with so I found a healthier version at Chocolate Covered Katie. I adapted it slightly to the one I posted below. Kudos to Katie for a fantastic recipe!

This, of course, does not taste exactly like banana bread it has a delicious banana flavor and wonderful texture. Enjoy this healthy alternative!

Oatmeal Banana Bread

Ingredients

Directions

Preheat oven to 350 F and grease a 9×6 loaf pan.

In a blender combine oatmeal, baking soda, baking powder, cinnamon and salt. Blend until it becomes fine.

In bowl mix bananas, applesauce, vanilla extract, vinegar and maple syrup (or honey). Add the dry ingredients from the blender. Add additional optional – chips/nuts and mix.

Pour the ingredients into the loaf pan and place in the middle rack in the oven. Bake for 35 minutes. Turn off the heat and leave the bread in the oven for 10 more minutes.
