Oatmeal Breakfast Bake

Somehow my very busy sisters, mom and I had a free morning to get our families together for brunch today. It was a last minute decision (with about an hour’s notice) and I needed to make something quickly. I googled breakfast casseroles and found this Baked Oatmeal Casserole recipe – perfect.

 

 

I had to put my little twist on the recipe. As I pulled the ingredients out to the counter, I realized I used all of the oatmeal up last week when I made granola. I decided to use that instead. Also we had skim milk instead of whole so I substituted 1 1/2 cups of that instead of 2 cups whole. It was a hit. All of it was eaten but adults and kids alike. Healthy and yummy! I will definitely make this again!

  1. Preheat oven to 375 degrees.
  2. Coat a 10×10 casserole dish with oil, preferably coconut oil
  3. In a large bowl, mix the dry ingredients oats, honey, baking powder, cinnamon, salt and half the berries. Stir well and pour into casserole dish. Add the other half of the berries to the top of the mixture.
  4. In bowl which is now empty, combine milk, egg, coconut oil, honey and vanilla. Whisk thoroughly. Pour on top of oatmeal mixture, making sure the all oats are soaked evenly.
  5. Then, slice the banana and add to top.
  6. Bake for 40 minutes.
