Over a year ago I changed my Instagram handle to PBandJen and with that, I made it my responsibility seek out and share healthy recipes with peanut (or almond) butter in the ingredient list.  This has been a YUMMY past-time!

My followers and subscribers keep asking me for links to those recipes, so I decided to consolidate my list and post it here.

Almond Butter Espresso Cookies – these gluten free and dairy free snacks are delicious! I make a batch and then freeze the cookies and eat a little at a time.
Power Snack Oats Cranberry Nut Butter This Oats Cranberry Nut Butter power snack was inspired by the ones that the Wasserman twins posted on their site. It packs a punch and is great pre-workout!
3 Ingredient no bake oatmeal cookies –  these no bake peanut butter oatmeal cookies are gluten free, vegan and dairy free! Make and freeze.
Fig almond no bake energy bites –  paleo and dairy free and gluten free.
Almond butter cookies – these are paleo, vegan, gluten free and dairy free  cookies. I make and freeze the dough and bake one or two cookies at a time in the toaster oven.
Paleo almond butter cups – These are SOOOOOO much better than Reeses! Made with real natural almond butter (or peanut butter) and dark chocolate. Paleo, vegan, gluten free and dairy free.
Chocolate Dipped Peanut Butter Stuffed Dates
Apple Nachos – I love this as a healthy snack. When I am sticking with a strict clean eating diet, I omit the chocolate chips (or use dark chocolate!).
